this is the santa cruz harbor, which is about a mile from our house. i took this on the way to my friends house for our weekly pizza and horror movie night. we made barbecue chicken pizzas (as usual) and watched let the right one in.
here’s the amazing (and super easy) pizza recipe (note: we always get the ingredients from trader joe’s, but if you aren’t lucky enough to have a tj’s, you can find or make most of the ingredients yourselves).
1 bag pre-made pizza dough
1 box of barbecue chicken-less chicken (if you don’t have tj’s, try smart strips chicken strips which should be in the refrigerated section)
1 bag mozzerella daiya cheese (the BEST vegan cheese!)
frozen or canned pineapple pieces
sweet baby ray’s barbecue sauce
directions: preheat the oven at 375 degrees. let the pizza dough sit at room temperature for at least 20 minutes before rolling it onto the pizza pan. once the dough has risen and been at room temperature, roll dough until it covers the pan. then, spread all of the chickenless chicken over the dough. use the sweet baby ray’s to cover the spots without chicken, and then put as much daiya on the pizza as you want. finish the pizza by sprinkling pineapple pieces on the daiya. bake the pizza for 25-30 minutes.
